<span style="font-family: Georgia, Times New Roman, serif;">I'm a bit behind in Christmas preparations this year. We were away for pretty much all November, so December and Christmas in general, just crept up on me!</span><br />

<span style="font-family: Georgia, Times New Roman, serif;">But I didn't give up :) I prepared some quick edible gifts for my friends and family. </span><br />
<span style="font-family: Georgia, Times New Roman, serif;">This time I played Willy Wonka. My kitchen was turned into small chocolate factory, thanks to the chocolate molds I bought a couple of weeks ago. </span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">If you don't have those, don't worry, you still can do it using small silicon ice-molds. If you don't have any, you can make just a chocolate bark which you can then artistically break :)</span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">The general recipe for this cake comes from lovely </span><a href="http://joythebaker.com/2012/12/cranberry-orange-pecan-coffee-cake/" target="_blank"><span style="font-family: Georgia, "Times New Roman", serif;">Joy the Baker</span></a><span style="font-family: Georgia, "Times New Roman", serif;">. </span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">She uses pecans and coffee in her cake. I replaced the pecans with honey covered peanuts and omitted the coffee. And not streusel (sorry Joy - that was too much for me :)). </span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">You can either go with Joy's lovely recipe or just change it a little bit like I did.</span><br />

The recipe is fairly simple and I'm quoting after Chocolate Shavings with a few small changes:<br />

Serves 2<br /><br />1/2 stick of butter (<em>I used about 50g</em>)<br />2 tablespoons of lightly packed brown sugar<br />1 egg<br />1 teaspoon of vanilla extract<br />1/4 cup + 1 tablespoon of cake flour<br />1 good pinch of kosher salt<br />1 tablespoon of cocoa powder<br />1/4 teaspoon of baking powder<br />1 tablespoon of milk<br />2 pears<br />
<em>Pistachios (optional)</em><br />Preheat your oven to 350F (<em>180 C</em>). Add the softened butter and sugar to a medium-size mixing bowl. Using an electric mixer, cream the butter and sugar until light and fluffy (about 3 minutes). Add the egg and beat until just incorporated. Using a small whisk, whisk in the vanilla extract. In a separate bowl, mix the flour, baking powder, salt and cocoa powder. Add the flour mixture to the butter batter in small batches, whisking the mixture until homogeneous. Whisk in the milk.<br /><br />Peel the pears making sure to leave the steam intact. Using a small knife or melon baller (<em>I used apple corer</em>), carefully scoop out the core of the pear leaving the pear intact. Ladle the batter evenly into 2 individual ramekins. Form a well in the middle of the batter with the back of a spoon and place the pear inside the well. Gently press down so that the batter settles around the pear. <em>(It worked better for me to first place the pears into ramekins and then cover them with the dough</em>)<br />Bake for 20 minutes or until the top of the batter is set. The inside of the batter will be gooey so the toothpick test will not be a good indication here. Let the cakes cool and serve with chocolate ganache. <br />
<em>I added some crushed pistachios as well for extra boost and pinch of colour.</em><br />

After all if you learn, learn from the best!</span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">However I was making violet madeleines, so I infused the butter with little bit of dried lavender and for the colour I used a few drops of coloring. <span style="font-family: Georgia, "Times New Roman", serif;">2 peaches (pitted and cut into wedges)</span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">1 pack of puff pastry</span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">1 cup of custard</span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">1 teaspoon of dried lavender</span><br />
<br />
<span style="font-family: Georgia, "Times New Roman", serif;">Preheat the oven to 200 degrees C.</span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">Roll out the pastry and fill the tarte (quiche) tin with it. Make little holes with fork or fill the pan with baking beans. Bake the pastry for about 15 minutes until starting to brown. </span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">Fill the pastry with custard and arrange the peaches. Sprinkle the top with lavender. </span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">Put back into the oven for about 10-15 minutes. </span><br />

Evenings are shorter and morning a little chilly. Yes my dears...we have to say goodbye to summer and brace for long cold months. <br />
But i decided to keep a little bit of sunshine with me, to steal tiny sweet ray of summer...<br />

I made apricot jam. With these lovely sunny like gems. <br />
I was inspired by lovely Bea from <a href="http://www.beawkuchni.com/2011/07/morele-przetwory-2.html" target="_blank">Bea in the kitchen</a> and her incredible canning skills. She has dozens of amazingly good jam, confiture and marmalade recipes. I'm making her plum-chocolate jam pretty much every year. <br />
This time I decided to combine couple of ideas from her apricot recipes and created my own apricot jam<br />

To usual suspects: apricots and sugar, I added as well cardamon and fresh thyme. <br />
And they cooked...What a smell!!! Amazing!<br />

At the very end I added some almond flakes. <br />
The end effect is really nice. <br />
Sweet and a little tangy at the same time with lovely smell of cardamon and just a tiny hint of thyme.<br />

<span style="font-family: Georgia, "Times New Roman", serif;">Yes, I thought it was a bit of a crazy idea at the beginning. But longer I thought of it more logical (after all it's fruit) and more tempting it was. </span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">The original recipe and idea comes from Ronelle from </span><a href="http://myfrenchkitchen.wordpress.com/2012/08/06/french-pierrot-gourmand-bonbons-et-sucetteslollipops/" target="_blank"><span style="font-family: Georgia, "Times New Roman", serif;">My French Kitchen</span></a><span style="font-family: Georgia, "Times New Roman", serif;">. She makes lovely tomatoes lollipops. </span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">And really it couldn't be easier - simply make caramel and dip your tomatoes :)</span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">Melt 100g of sugar with couple of spoons of water. Do not stir! Just move your pan so the sugar melts evenly. Once caramel is nice and golden (be careful not to burn it!) carefully dip your tomatoes and turn around to cover all of it. Sprinkle with sea salt.</span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">Important - you have to work quickly , otherwise the caramel will harden (if it happens gently reheat the caramel). </span><br />
<span style="font-family: Georgia, "Times New Roman", serif;">Caramel will create lovely, crunchy texture on top of your tomatoes. </span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">My tomatoes were part of the dinner appetizer. I presented it together with basil olive oil, goat cheese covered in almonds & good baguette.</span><br />

<span style="font-family: Georgia, "Times New Roman", serif;">These particular batch of chanterelles ended up in simple but nice dinner of polenta with creamy chanterelle sauce. Unfortunately I don't have picture of the ready dish (we were too hungry for making pictures - sorry).</span><br />

<li class="instruction">Preheat oven to 350F (I'm in metric system - 180 C worked great). Lightly grease and flour the cups of a mini-loaf pan (or a jumbo muffin tin, if you prefer).</li>
<li class="instruction">In a large bowl, whisk together yoghurt, sugar, eggs and oil until smooth and well blended.</li>
<li class="instruction">Add flour, baking powder, salt and lemon zest, and stir until the batter is smooth and silky. Pour into the prepared mini-loaf tin, dividing evenly between the cups. Scatter berries on top of the batter, using around 2 tbsp per loaf.</li>
